Sang Yoon, famed for the iconic burger he’s served for years at Father’s Office, opened his Helm’s Bakery food hall late last year in Culver City. Among the most popular items there is the egg salad sando, inspired by the versions at Japanese convenience stores and old-school Jewish delis. Yoon came to the Times Test Kitchen recently to make that sandwich for our ongoing “Chef That!” video series — and to show us his pro tip for peeling a cooked egg without losing any of the white.
